E1404–E1452 — Modified starches

Starches treated to survive heat, acid, and freezing — thickeners in soups, sauces, yogurts, and ready meals.

Allergen connection

The starch can come from maize, potato, tapioca — or wheat. EU rules require the cereal to be named when the starch derives from a gluten cereal (“modified wheat starch”). Unqualified “modified starch” in the EU is therefore not wheat. Outside the EU, be more cautious with unspecified starch.
