E270, E325–E327 — Lactic acid & lactates
Acidity regulators — lactic acid (E270) and its sodium/potassium/calcium salts (E325–E327) — used across pickled, fermented, and baked products.
Allergen connection
A myth-buster: despite the name, lactic acid is almost always produced by fermenting sugar from plants, not from milk — “lact-” refers to the chemistry, not the source. It contains no milk protein and no lactose. Scallergy does not flag E270 as milk for that reason; the word “lactose” on a label is a different matter and is matched.
