E441 — Gelatine

A gelling protein from animal collagen. Usually pork or beef — but fish gelatine exists and is used in some candy, supplements, and for clarifying wine and juice.

Allergen connection

Fish gelatine must be labelled as fish-derived in the EU. Reactions to it in fish-allergic people are uncommon but documented — treat “gelatine” on kosher/halal products (where fish gelatine is more likely) with extra care.
