E471/E472 — Mono- and diglycerides
Emulsifiers in bread, ice cream, margarine and countless processed foods — fats split and recombined to hold mixtures together.
Allergen connection
Almost always vegetable-derived (often soy or palm oil); dairy-derived versions are possible but rare. As refined fats they carry negligible protein, so they are generally not an allergen concern — included here because “glycerides” worries many label readers. When the source matters to you (severe allergy, dietary rules), only the manufacturer can confirm it.
