E621 — Monosodium glutamate (MSG)

The best-known flavour enhancer — pure umami. Historically extracted from wheat gluten; today produced by bacterial fermentation of sugars.

Allergen connection

Another myth-buster: modern MSG is not made from wheat and contains no gluten — it is safe for coeliac disease from a gluten standpoint. Soy sauce and hydrolysed proteins served alongside it are a different story: hydrolysed wheat/soy protein IS matched by Scallergy as wheat/soy.
