Flavour enhancers (disodium guanylate E627, disodium inosinate E631, and their blend E635) that boost savoury umami taste, usually alongside MSG.
Allergen connection
E631 in particular can be produced from fish (sardines) as well as from tapioca fermentation. Labels rarely say which. For strict fish avoidance, treat unexplained E631/E635 in savoury snacks as a question for the manufacturer.
